    Hi have you ever made coconut milk yoghurt, I am trying without getting the approval of my EE 4yr old, the taste and thickness is wrong and I need help he really misses yoghurt. I have found recipies online but they use nut milks as well and he is nut,soy,dairy,wheat,egg and fish free.
    I also need help with your coconut butter I have tried it a few times and it tasted pretty good but when it hardened it kind of went crumbly and almost like dessicated coconut again am I not blending it long enough? W thought it was pretty good until I opened a jar of cocopure chocolate coconut butter and he sat there eating it by the spoonful!
    On the coconut subject which coconut oil do you use, I threw out my bottle because the smell made me gag let alone the taste, oils aint oils right!
    Ok sorry about all the questions, if yogurt is not your thing (can’t be blended or pounded!) thats ok, you have helped enough in my kitchen already.
    We all ate the chicken pumpkin patties sans cheese for dinner the other night and W and M LOVED the cookie dough balls made with besan form the EE booklet. Bless you Lou, you help keep me sane:) cheers Kate

      Hiya Kate!

      Honestly, I haven’t tried making my own coconut yoghurt – do you have a proper yoghurt maker? I think this is key because yoghurt relies on a consistent appropriate temperature for the culture to do it’s thing properly.

      Coconut butter-wise it sounds like you need to keep blending it for a little longer when you initially make the recipe – it can take ages, but be patient. Also keep in mind that coconut being a saturated fat, it goes solid at room temperature (particularly in winter) so just zap it in the microwave for 20 seconds or so to return it to it’s fudgey/runnier consistency. Also you can make your own version of the Cocopure stuff… add a little sweetener and cocoa powder to taste!

      Coconut oil can be a little strong – look out for the REFINED version – it is tasteless and odourless, the unrefined is rather pungent!

        Thanks, no wonder the oil as a bit full on! I’ll give the butter a bit longer I am determined to crack it, it tastes really good :)

          Yeah, I’m obsessed with coconut butter… if you are still not happy with the consistency you can add maybe a tablespoon or so of coconut oil once it has become “butter” in your food processor – I think some food processors can’t handle the amount of whizzing that needs to be done to get it super creamy, so the oil helps out! This will help to make it more fudge-like… plus I find the more you do in one batch the easier it is… I do at LEAST 5 cups of dessicated coconut in one batch, but again it depends how big your food processor bowl is (mine is an 11 cup).

          I use the Banaban coconut oil – I don’t mind the taste/smell of the unrefined stuff, but I’m pretty sure they do an odourless/tasteless one too – check out your local health food store :)

    I want to thank you for your wonderful blog. I have been making the popcorn ball recipe, so good. I have nut allergies and it so nice to find recipes I don’t have to make substitutions and hope it turns out! Just starting to poke around but am excited to try out some of the beauty recipes. I make my own lotion, excited to try the mask recipes.

      I just love DIY beauty products… it just feels so satisfying to know EXACTLY what you are putting on your skin, and that is is GOOD for your skin. I’ve always had super sensitive skin, so playing around with my own stuff has really helped me discover what works for ME. I’ve just been having fun making some herb shower gel, and it’s awesome…. I’ve been meaning to do a post on it!
