overnight oat-cake/smashing strawberries on a sunday

This is what I’ve been reduced to.  Pounding away like some kind of freak.  My food processor is involved in “3-4 weeks of testing, replacing and re shipping.”  3-4 weeks?  Do you know how often I use this machine? 3-4 weeks without one?

Gah.

There’s more to life than food processors (thank goodness, it would be a rather boring existence otherwise).

Make up the following recipe the night before…it’s a similar idea to this recipe, but it’s always nice to wake up to sweet strawberries.

Overnight RAW Strawberry Oat-Cake:

(Vegan, RAW, gluten free if you use certified oats, wheat/refined sugar free)

Makes 3 large (individual size) cup cakes.

  • 2/3C oats
  • 1/3C whole almonds or almond meal
  • 1T ground flax seed
  •  8 small strawberries (a good handful… get the sweetest ones you can find!)
  • 6 large medjool dates (you can sub in prunes here if you are not fond of dates)
  • 1t pure vanilla extract
  • 1/4t sea salt
  1. You probably have a food processor… so just dumped everything in and whizz until a soft dough forms.  Otherwise, bash it all up in a large pestle & mortar a la Lou.
  2. Press into silicone cupcake moulds (or similar)
  3. Pop in the fridge overnight.
  4. In the morning top with:
Strawberry Smash:
  • Approximately 15 small strawberries
  • 3t agave syrup
  • Small pinch of sea salt
  • 1/2t lemon juice
  • Roughly chopped raw chocolate (or just regular stuff/cacao nibs) for garnish.
  1. Smash together first 4 ingredients, spoon on top of the cakes and sprinkle with chocolate.
It’s lovely if you let the Smash sit on top of the cakes for a little while before serving, the sweet strawberry juice soaks into the cake and it’s very very good.  Juicy.

This would also be delicious drizzled with coconut butter, but alas, I have finished my supply and cannot make more until the return of my machine.  Gah.

Some sort of nut cream like this or this would also be wicked knickers.

At least I’m going to be sporting some awesomely pumped up guns from all this pestle pounding.

    Ooooooo strawberries. Berries in general. Berries berries berries! It’s berry time in my little part of the world and my berry vines have just gone mental. Wish I could share some with you.

    It’s kinda cool that you have a FUNCTIONAL mortar and pestle. Not just one that sits in your kitchen by some freak of fashion… “piece of old muslin and some terracotta tiles and suddenly it’s Tuscany”. Hope the food processor issue is resolved : D

      My mortar & pestle is one of my most used kitchen tools – I am always bashing/grinding something in there! Best $15 I ever spent :) Ha, I’m cracking up at your Tuscany-fashion call!

      Berries are lovely aren’t they, little pops of colourful joy – wish I could sample some of yours :)

    I sliced the base of my thumb really badly with my new food processor this morning, so right now 3-4 weeks before having received it would have been kind of a good thing. Darnit it’s hard to shampoo your hair with one hand.

      Oh Hannah, I’ve done that too – it’s horrible! I feel your pain (not literally, but you know) It’s hard to do ANYTHING with one hand… they are pretty useful things.

    Seriously, life without the food processor…a scary thought! I have been known to do the mortar and pestle deal, however. Some things just require it! But wow – now I KNOW you are going to come up w/ something fabulous for the Potluck! This oat cake is so inventive and looks – so good!

      It was delicious… surprising as I was just randomly throwing things into the mortar & pestle with really knowing what I was making :) I’m so excited about the Potluck, it’s a wicked idea :)

      Yeah man, you can’t get much better than that combo right there… so so good. We got the most amazingly SWEET strawberries too – little tiny ones like pops of sweetie joy joy :)
