New things

New favourite cereal blend in place of oats.

Rice brain straws, quinoa puffs and buckwheat groats.  I have some soy beans soaking and I am going to make my own soy milk tomorrow.  Hooray.  Yeah I know, I’m a weirdo.

Something new in the recipe arena… a contribution from the elusive Viper.  We seem to be on a roll with creamy nut butter infused sauces, after his chicken pie the other night.  Good thing Viper is a sweetheart and made this vegan so I could partake.  He has been cooking up a storm today… we are feeding the neighbours a BBQ lunch.  Feels nice to be out of the kitchen for once.  I’m in charge of stopping Misty and Boosty munching coloured chalk, which seems to be their new favourite food.

Viper’s Vegan Satay Sauce:
The original idea came from an unknown recipe book through Viper’s big bro… we ended up changing the recipe a heap because we didn’t have all the ingredients.  So somewhere out there, is the original inspiration ???  I think it was an Indonesian style sauce.  Dues must be paid.
  • 1/4t ground coriander
  • 1/8t ground cumin
  • 1/2t smoked paprika
  • 1/4t dried chilli flakes
  • 2 cloves garlic, crushed
  • A one inch piece of fresh ginger, grated
  • 2 small brown onions, diced
  • 1T coconut oil
  • 4T coconut cream
  • 2T crunchy peanut butter
  • 2t soy sauce
  • 1t apple cider vinegar
  • 1/2C water
  1. Heat coconut oil in a small saucepan.
  2. Add the cumin and coriander and saute for a minute or so.
  3. Add onion, ginger and garlic… cook until onions are soft and translucent.
  4. Add in paprika and chilli flakes.
  5. Add coconut cream plus 1/4C of the water to de glaze the pan.
  6. Cook for a few minutes to reduce.
  7. Add remaining water, vinegar, and  peanut butter… reduce to a very very gentle simmer.
  8. Cook on the lowest setting for at least 30 minutes… this time is required for the onions to break down and release their beautiful sweetness.

Viper served this with marinated chicken kebabs, while Misty and I had baked tofu… it’s not the most attractive looking sauce, but it is pretty rippin’ tasty.  Cheers, Viper….. (he’s too shy and didn’t want to write the recipe himself).

Remember this?    It’s my Sun Cooked Lime Pickle   experiment.  I have to admit… I was afraid to try it.  It just goes against my brain’s logic… ‘Here, eat this brownish looking goo, it’s been sitting outside in a jar for 2 months, go on, it’s good, I promise!’  I’ve had some pretty grossed out visitors at my place questioning my sanity.  Viper was scared.  He did the “sniff test” straight away, and a look of surprise crossed his face…. ‘It smells exactly like it should!’

We have a new winner in home foodie experiments.  If you’re heading into a sun-shiny season, give this a whirl… it’s worth the wait.

    Lately I’ve been obsessed with roasted chickpeas covered in different sauces and eaten over brown rice… I have no idea why lol. I bet this sauce would be amazing with my chickpea/rice combo!! Gonna test it out this week!!

      Oh it would be AWESOME with your chickpea rice combo… I’m going to try YOUR idea with the sauce too…. YUMMO :) I haven’t had roasted chickpeas in ages, I love them.

    So, you’re into eating hamster food for breakfast huh? Just tell me, afterwards, do you feel like you have the energy to run for miles and miles, but at the end of the day, it feels like you’ve gone nowhere? ;)

    The satay sauce sounds fab and as soon you better believe I’ll be adding it to the list of Things to do after Lent is over! Ahhhh, my precious nut butter, you’re only 1 more week away from my lips!!

    Congrats on the lime pickle! I saw some mango pickle at the international food store the other day and couldn’t help but think of you!

      Oh I think my name should be “Hamster Girl” – seriously I feel as if I run around all day (trying to stop Misty killing himself) but achieve NOTHING ! Oh toddlers!

      Oh man you should have a nut-butter party at the end of Lent for sure…. well done, you’re a legend – I think I would wither away without my nut butters ;)

    My goodness – how appropriate (well half so). We just got back from a wknd trip where I tried a peanut butter bacon cheeseburger (I know – im sorry! Louis and I sort of split it though). Anyway it reminded me how peanut buter goes with EVERYTHING and Im plotting a PB veggie burger salad for VERY soon. I love the photo of Viper and Misty!

      Yes, peanut butter goes with everything…. I’m not sure I have found something it DOESN’T work with yet? ooooo Viper would have been all over that bacon PB cheeseburger like a rash :) Check out the chicken pie in my previous post for more peanut butter+ meaty goodness!
